How do I make activity items inactive in bulk?

You can do that by using the Batch Update feature in the Activity Items screen. Just select the activity items that you want to make inactive and click Actions > Batch Update. In the Batch Update dialog, select the Status field, set its value to Inactive and then click Update. Check CORE Help Center for details on batch updating activity items.
