How can I see which projects a fee schedule is assigned to?

You can see this from the Fee Schedules screen. It displays the fee schedules you currently have in Core. Choose any fee schedule and select Assign Project from the row-action menu. The Assign Project dialog displays all your projects and has a check mark next to the projects to which the fee schedule is currently assigned. Check the Core Help for more information on fee schedules.
