Do I need to specify all the accounts in QuickBooks Sync Detail?

You should always specify the four default accounts present in QuickBooks Sync Detail > Sync Settings > Accounts > Default. The other accounts in the table there are required only when you send invoices with summarized items to QuickBooks Online. Check the Core Help for more details.
