How do we change the Billing Through date on invoices?

The date filters in the Invoices > Invoice Filters and Options screen control the Billing Through date on invoices. So it depends on the date range you select here. 

The option to show the Billing Through date is set in Global Settings > Billing. Otherwise, the invoice dates appear as a From-To range.
