Is it possible to remove the date range at the top of invoices?

No. You cannot turn off the date completely on the invoice. But you can control how it appears. If you check the option Show billing through on invoices in Global Settings > Billing panel, the invoice only displays one date as Billing Through and if you un-check this option, the invoice displays the range of dates (Billing From/To).
